Cranberry Air

While not a widely known ingredient, Cranberry Air is essentially a cranberry foam or espuma that can add a light and airy cranberry flavor and visual appeal to cocktails. It can be made using cranberry juice, simple syrup, and a stabilizer like gelatin or soy lecithin, then frothed using a whipping siphon or immersion blender.
