Tejate

Tejate is a pre-Hispanic maize and cacao beverage from Oaxaca, Mexico, that is occasionally used as a unique, nutty base or modifier in artisanal cocktails. It contributes a complex, earthy profile with a distinctive creamy foam head and flavors of toasted corn, fermented cacao, and mamey pits.
